Kianna's delicious double dipped fried chicken

Has mom, grandma , or just someone you love dearly made some delicious fried chicken that made you rethink everything in your life? have you ever wondered if there is anyway to make the chicken 100 times better? Well I'm not your Momma or your grandma so my chicken is not going to taste as good or even close but i decided to see if frying the chicken multiple times would affect the chickens taste, color, smell, and texture.





To start off we should talk about what is double frying chicken exactly? Its when you fry the chicken twice. People do this process in order to get a their chicken crisper.The science and process behind this fried chicken:

-batter is coated around the chicken to create a insulating layer between the chicken and the oil

-dehydration process is making chicken drier since water escapes causing a crisper crust

-bubbles form around the chicken to help not penetrate the chicken

-after taking out chicken and putting back in the oil to double fry the chicken has less water this the reason double frying works. Another reason it works is because after the first fry the microscopic architecture of the food is changed. Which makes the pathways of the chicken simpler and start to merge with each other.


Recipe:

-two cups of all purpose flour
-4 tablespoons of season salt
-2 large eggs
-1 pound chicken
-3 cups of oil

The independent variable for this process was the amounts of times chicken was fried. All ingredients amounts, methods, and temperatures were kept constant.

I coated the chicken by first seasoning it. Then i dip the chicken in the egg whisked egg. Finally i put the chicken in the flour and Violá!



For the first trial i only fried the chicken once, the second time i fried the chicken twice, and the third time i fried the chicken 3 times.

Results:

Of Course frying it the first time tasted, smelled, and was colored like your average piece of chicken. The second trial piece of chicken was not only crispier but it had a different coloring as well that was darker. The third trial chicken was way darker in color and the oil had become darker.
