 Background
If you’re wondering how sweet potatoes got their name we’re about to tell you. As soon as sweet potatoes start to heat up during the boiling process, a special enzyme, particularly in sweet potatoes, goes to work. This particular enzyme breaks down the tasteless, chalky starch into maltose and that’s when the sugar kicks in. The enzyme becomes active around 135 degrees and stops at around 170 degrees. In other words, if you bake you bake your sweet potatoes long and slow the enzyme will have more time to break down more of that chalky starch so that your sweet potatoes will come out very sweet.

Ingredients

4 Sweet Potatoes in each pie
1/2 Softened Butter
1 Cup White Sugar
1/2 Cup 2% Milk, Condensed Milk, Evaporated Milk
2 Eggs
1/2 Teaspoon Ground Nutmeg
1/2 Teaspoon Ground Cinnamon
1 Teaspoon Vanilla Extract
3 Pie Crust Pans

Preparation
  • Boiled 16 potatoes
  • Preheat your oven to 350 degrees
  • After washing the potatoes off start to pell them
  • About four potatoes to a pie
  • Add sugar, eggs, and milk to a bowl and mix well.
  • Then start to enter the rest of your ingredients
  • When mixer becomes almost like a paste enter it into your pie crust pan
  • Enter pies into the oven for 45 mins to an hour

Trial One 
This pie had 2% milk inside. The pie texture was very creamy and the pie was browned. The pie taste just like if your grandmother would have made it.

Trial Two
This pie contained evaporated milk. The milk made the pie a little watery than the other. It wasn't as stable as the other pies. The taste was bitter or duller as the others. If using evaporated milk you should use more sugar or vanilla abstract.

Trial Three
This pie was my personal favorite containing sweet condensed milk. The texture was amazing and the pie had just enough sweetness inside. This pie would be one of the desserts I would serve at my family function. If you have a sweet tooth like me then this would be the perfect one for you.

Results
All our pies were amazing but some were sweeter than others. The 2% milk had the slightly sweet taste, sweet condensed milk was the sweetest, and evaporated milk had a dull a bitter taste. This is because evaporated and condensed milk has been cooked at a high heat to remove the 60% of its water content. Condensed milk is made up of 40-45 percent sugar and is the reason why that pie had a way sweeter taste than the others. Evaporated milk is a more watered down. Therefore using different kinds of milk when baking sweet potato pie tends to play an important role in its taste and if you're looking for a taste that's just right, bake with 2% milk.
