HOW DOES COOKING CHICKEN THREE DIFFERENT TYPES OF WAYS WITH THE SAME RECIPE AFFECT THE APPEARANCE AND TASTE? 

Background Information 
The chemical formula for chicken is C47H75F3N10O15, one of the chemical names is OVA Peptide. The way fried chicken is made is, the crispiness comes from when raw, battered chicken sits in the oil bath, convection gets molecules racing, causing hot oil to sink and colder oil to rise. Boiled water races out from the meat in the form of steam bubbles. The grease keeps the chicken nice and crispy. A chemical reaction starts to take place at this point. Hydrolysis sucks the water out of the chicken and Oxidation takes fatty acids, called volatile compounds, escaping the chicken and goes into the oil. Flavor comes second in the chemical process. The oil reacts with the chicken having a Maillard reaction this causes the chicken to turn brown. Also, color and texture changes because of the seasoning. In addition, many heterocyclic compounds are made when high temperature and low moisture conditions are used during certain cooking methods of chicken meat such as frying, or pressure cooking compared to boiled chicken meat.


Fried 
  1. Season the chicken  
  1. Put the pot on the stove and pull 1 and ¾ cups of oil in the pan. 
  1. Then set the stove on medium high and let the oil heat up some. 
  1. Put the pieces of chicken in the pot and if it starts popping too much put a lid over it. 
  1. When both sides of the chicken are golden brown to how you like it, use a clipper or fork to remove the chicken out the pot. It can possibly take 10 minutes on each side. 
Baked 
  1. Season the chicken 
  1. Set the oven on 350 degrees 
  1. Get a pan, you can either spray it with pam or get a piece of aluminum foil. 
  1. Place the chicken on there and then place the pan in the oven. 
  1. Since it takes longer for it to cook it can possibly take 20 minutes on each time or until its brown. 
Air Fryer 
  1. Season the chicken  
  1. Spray the air fryer before placing the chicken in there. 
  1. Cook for 10 minutes on each side until its brown or to your liking.

As the results was being eaten by Angel and Jada, the most appealing one was the fried chicken and the chicken that was made in the air fryer. The baked one wasn’t to good, but it was alright. They were all about the same color that half dark brown and half-light brown. As stated in the background info what makes that nice brown color is called Mailliard reaction and depending on what seasoning.
