How does the type of cheese in a grilled cheese effect the cooking time of the sandwich?

Background information
According to food historians, mankind has paired bread with cheese for centuries. Even ancient Roman cookbooks advised combining bread and cheese at mealtimes! Cooking bread and cheese together, however, is a more recent phenomenon. Although no one can pinpoint the precise origin of grilled cheese, the sandwich became very popular in the 1920s. That’s when scholars speculate some enterprising individual came up with the idea to make a grilled cheese sandwich, but the idea quickly spread commercially as well as in the home. What makes a great grilled cheese study’s say it is the cheese ph, ph level is a measure of acidity, which is very important in cheese making what is acidity, Acidity can be expressed as pH. What exactly is acidity? Acidity can be described as the number of free protons (H+ atoms) floating around in the milk/cheese as you can see in this diagram Here.

The American cheddar Is a classic some say it is the standard of grilled cheese it cooks fast tase great and most of the time you can just find it in your fridge because of how long it last.
The American white is also very convenient You can find it in your fridge most of the time but is usually made on a cold cut sandwich it taste rather odd on and grilled cheese sandwich.
The extra sharp white cheddar is a very hard cheese to melt you will find yourself actually Burning your bread before it melts it taste nasty because of how strong it is and has a weird after taste.
In conclusion the types of cheese used to make a grilled cheese is very important because of all the various taste that cheese have and because of all the various melting points the cheeses
