The History
The word biscuit comes from the Latin word bis cotus which means twice baked. The idea to make biscuits came from Romans, however the biscuits that we know today were developed in the Middle Ages. 


What Is Happening?
When fats are used with chemical leaveners, their responsibility is to melt which leaves behind small air pockets.These air pockets are used by the chemical leaveners to release their gases, creating lift in your final product. In this case, the milk is the fat that is used in the biscuits. White milk is made up of water, fat, protein, lactose, and minerals. Buttermilk is the slightly sour liquid that is left over from churning butter.When buttermilk is made from butter, it sours from bacteria present in the liquid which causes the production of buttermilk. Almond milk is a plant manufactured milk from almonds. It does not contain cholesterol, saturated fats, or lactose.

What to do
  1. Preheat oven to 375 degrees 
  2. Pour 2 cups of self- rising flour into a bowl 
  3. Add 1 cup of crisco 
  4. Pour in ½ cup of desired milk
  5. Roll the dough into medium size balls and them place them in a glass dish
  6. Let biscuits cook for 20 minutes
  7. When done let biscuit school for 5 minutes





The Difference In Taste With Different Milk
Buttermilk- The biscuits rolls quick and turn a little golden. They were also very soft animals machine in the middle.  They tasted buttery and made 20 total biscuits. 
White milk- The biscuits turned very brown and rose a bit more. The middle is soft but not as mushy and they tasted like bread( a bit dry). Made a total of 20 biscuits. 
Almond milk- The biscuits rolls quickly and were very light. They had a very soft and light center. They had a slight nutty aftertaste and made a total of 19 biscuits. 

When it all comes down to it, the type of milk plays a big role in how the biscuits will taste and how moist they will be. Certain ingredients like fats, and lactose provides the softness and taste needed to create all around good tasting biscuits.
